    Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

    Observation: The Cut Cantaloupe in the Sta Kold Reach in Cooler was observed cold holding at improper temperatures. The 4 Cheese Blocks and a bag of Shredded Cheese in the Traulsen 2 Door Reach in Cooler were observed cold holding at improper temperatures. Observed 3 containers of Yogurt, 9 Blocks of Cheese, 4 Bag of Shredded Cheese, Box of Yogurt cups, 4 boxes of Yellow cheese stick and a pan of White cheese sticks cold holding at improper temperature.
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.
  • Equipment - Good Repair and Proper Adjustment (corrected on site) (repeated violation)
    Observation: The Traulsen 2 door Reach in Cooler and Walk in Cooler were observed in a state of disrepair and damaged. Observed an Ambient Air Temperature of 50'F in the Traulsen 2 door Reach in Cooler and internal food temperatures of greater than 41'F. Observed the condenser not operating and an ambient air temperature of 50'F in the Walk in Cooler.
    Correction: Repair the Reach in Cooler and Walk in Cooler to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the Reach in Cooler and Walk in Cooler, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

    Observation: The thermometer on the Traulsen 2 Door Reach in Cooler is not in good repair and/ or not accurate in the range of use. Observed an Ambient Air Temperature of 37'F on the Units electronic Thermometer and 50'F on the Ambient Air Thermometer inside the Unit.
    Correction: Repair, replace, and/or maintain the calibration of gauges for accuracy and function in the intended range of use.

    Correction: Ensure food is safe and unadulterated.
  • Critical: Ready-to-Eat - Potentially Hazardous Food - Disposition* (corrected on site)
    Observation: The commercially processed ready-to-eat (RTE) Sour Cream and Tomato Paste in the refrigeration unit was not discarded by the ""consume by"" date. Consume by date of 11-18-13 was observed on a Sour Cream container in the Walk in Cooler, Unknown date for the Tomato Paste.
    Correction: Discard the food at this time and ensure all commercially processed RTE food is served, sold or discarded by the ""consume by"" date after opening. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
