    Observation: Single-use gloves while worn during multi-tasked food preparation.
    Correction: Discard gloves when changing tasks and wash hands when changing from raw food to ready-to-eat (RTE) food preparation to prevent cross contamination. Single-use gloves shall be used for only one task such as working with RTE food or with raw animal food and used for no other purpose.

    Observation: Sliced cheese in the prep cooler next to the grill were at improper temperatures.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.

    Observation: Floor by the 3-vat sink is damaged. There is water under the tiles and the tiles are cracked.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. Correct by 9-14-2015
08/31/2015Routine
Received a complaint on 8-31-2015 that they witnesses the cook mix frozen and cooked meats together, hten use the same utensils on cooked bacon that he had just used on raw chicken. Also stated they were handling cash and food with the same gloves. Complainant witnessed this on 8/30/2015.
I conducted a routine inspection on 8/31/2015. There is one dedicated spatula for the bacon, two dedicated spatulas for beef, and two dedicated spatulas for chicken. Spatulas all have different colored handles and are stored in different locations. I observed employee using the spatulas as they are dedicated.
I observed employees using bare hands at the register and then putting clean gloves on before they started handling foods again.
I did observe an employee using the same single-use gloves to handle raw animal foods and then ready-to-eat foods. I spoke with the manager and the employee about this and he immediately corrected this.

    Observation: Raw foods of animal origin stored over ready-to-eat (RTE) food in the walk-in refrigeration unit.
    Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.

    Observation: Soap was not provided at the hand washing lavatory in the kitchen.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.

Refrigeration units must be turned on and capable of maintaining cold holding at 41 or below.
Relocate thermometers in refrigeration units to the warmest part of the coolers.
Provide hand wash signs at hand sinks.
Provide a hand sink in close proximity to the 3-vat sink.
Call for a reinspection once the above items have been addressed.
