Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site) Observation: Dishes were not being properly sanitized. Observed employee placing soapy dishes into a bin of sanitizer without rinsing them first.
Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.
Handwashing - Using a Handwashing Lavatory Observation: Hand sink by the 3-vat sink is not operational.
Correction: Repair the hand sink. Correct by 6/2/2015.

Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) Observation: Several foods in the prep cooler on the right were at improper temperatures.
Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) Observation: Potentially hazardous foods that were delivered before I arrived were still sitting in boxes outside refrigeration at improper temperatures.
Correction: Potentially hazardous foods should immediately be placed into refrigeration units after delivery.
Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* Observation: The ready-to-eat (RTE) commercially processed chicken salad, tuna salad, crumbled eggs, and cooked chicken in the refrigeration unit was not properly dated for disposition after opening.
Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Display units are not maintaining cold holding at 41 or below. Be sure units are capable of maintaining cold holding at 41 or below. Provide handwash signs at hand sinks. Make sure ambient air thermometers are located in the warmest part of the coolers. Call for a reinspection once above items have been corrected. No violation noted during this evaluation.
