    Observation: Employees are not properly trained in food safety as it relates to their assigned duties.
    Correction: Train all employees in food safety as it relates to their assigned duties.
  • Critical: Food - Safe and Unadulterated* (corrected on site)
    Observation: Several plastic packages of pasta obsrved to be unsound or adulterated.
    Correction: Ensure food is safe and unadulterated. Note: Products were discarded.
  • Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation* (corrected on site)
    Observation: The raw animal food on display is stored in a manner that may cause biological cross contamination of to ready-to-eat food (RTE).
    Correction: Separate raw animal foods during storage, preparation, holding, and display from raw RTE food including other raw animal food such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
  • Food Storage - Clean and Dry Location
    Observation: Food stored on the floor or food stored less than 6" above the floor. Also, numerous food storage containers stored overnight uncovered or unprotected from possible contamination.;Elevate food storage onto approved shelving with minimum 6" legs or casters. Cover/enclose all foods during storage to prevent possible contamination.

    Observation: Observed methods are not being used to control pests
    Correction: The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by using methods such as trapping devices or other methods as required.

Leaving cooling information for the operator and glove use information had a discussion concerning handling ready to eat foods with bare hands. Leaving information concerning employee health policy for the operator. Please call the Health department when the refrigeration has been repaired leaving contact information for the operator.

    Observation: Food in the pizza preperation unit cold holding at improper temperatures
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. Operator relocated during the inspection. Operator to call a refrigeration specialist.
  • Hand Drying Provision (corrected on site) (repeated violation)
    Observation: No disposable towels were provided at the hand washing lavatory in the pizza prep area and the wait station.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
