Observation: Some of the cutting board(s) used by the students are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
- Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures
Observation: The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 180ºF. The temperature is <160F.
Correction: The operator will discontinue the use of the machine and use the three compartment sink to wash, rinse, and sanitize equipment and utensils. The operator will have the machine serviced and send the invoice to the Health Department.

- Nonfood-Contact Surfaces - Corrosion Resistant/Nonabsorbent
Observation: The nonfood contact surface of the shelving in front of the walk in cooler is pressed board and is not corrosion resistant, nonabsorbent, and/or smooth.
Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent. Operator will replace with wire shelving units.
- Equipment - Good Repair and Proper Adjustment
Observation: It appears the air temperature in the single door upright refrigerator is slightly elevated.
Correction: Repair the single door refrigerator to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the @EQUIPMENT@, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

- Critical: Equipment and Utensils - Before Use After Cleaning*
Observation: The food-contact surfaces of the following equipment were not observed sanitized in kitchen because hot water sanitizing dishwashing machine is not fully sanitizing. Wax tape did not melt and turn black.
Correction: Operator to repair unit and ensure it is fully sanitizing prior to operating. After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.
- Handwashing Cleanser - Availability
Observation: Soap was not provided at the hand washing lavatory in the @Location@
Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
- Hand Drying Provision
Observation: No disposable towels were provided at the hand washing lavatory in the @Location@
Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

- Cooling, Heating, and Holding Capacities
Observation: Single door refrigerator in cooking area needs more shelving to allow for storage of pre-prepped ingredients. Since there is only one unit in this area, this is important to have more shelving in this unit to ensure it does not become overstocked.
Correction: Provide additional shelving necessary to maintain food items at 41oF or below. Overstocked equipment does not allow for proper air circulation and/or heat transfer. Improper food storage temperatures are a major contributing factor to foodborne illness.
- Drainboards
Observation: The drainboards/utensil racks/storage tables located are not large enough to accommodate all cleaned pots and utensils.
Correction: Provide additional drainboards/utensils racks/tables so that all cleaned and soiled utensils and equipment can be properly stored as they accumulate during operation.
- Floor and Wall Junctures, Coved, and Enclosed or Sealed
Observation: Floor and wall juncture and flooring/walls surfaces need sealing: gap at reaf of stovetops will close gap, gap at rear of dishwasher-will install casters or seal to wall, floor panels for gas lines beside stoves, stairs to and floors in basement.
Correction: Seal floors and wall junctures in rooms to ensure ease of cleaning.
- Floor Covering, Mats and Duckboards
Observation: Floors in kitchens are not smooth and easily cleanable. Surface is rough and if upon inspections appears to hold soil, grease and/or food debris, it will need to be resurfaced with resiliant washable surface.
Correction: Continue to clean to remove soil and debris..
- Toilet Rooms - Closing Toilet Room Doors
Observation: Toilet room doors are being kept open--self closing devices are required to maintain them closed.
