This visit was made to conduct a routine food inspection, observed excellent labeling and dating of foods, and staff was adequately trained on employee health. Great job on making information available to staff!
Please note: Please ensure foods are cooled to less than 41F before covering and placing them on display.
*Repeat violations are subject to civil penalties*

  • Cooling Methods: Containers Properly Arranged & Covered (corrected on site)
    Observation: Food containers for cooling food are arranged so as not to allow for maximum heat transfer. Observed that containers are covered and then stored in the display unit before reaching 41F.
    Correction: Food containers in which food is being cooled shall be: 1) arranged in the equipment to provide maximum heat transfer through the container walls, and 2) the food containers shall be loosely covered or uncovered as long as protected from contamination to facilitate heat transfer from the surface of the food. Discussed proper cooling methods with the PIC.

Monitoring display units to maintain food temperatures at 41F or below.
  • Critical: Handwashing / When to wash hands (corrected on site)
    Observation: A food employee failed to wash his or her hands before engaging in food preparation, after touching bare human body parts, after coughing, sneezing, eating, after handling soiled utensils, or after engaging in any activity that could contaminate the hands.
    Correction: ALL food employees shall be washing their hands OFTEN especially after handling trash, using the restroom, handling raw meats, handling soiled equipment and utensils, BEFORE putting on clean gloves, etc. Proper handwashing frequencies will aid in the reduction foodborne illness.
  • Cleaning Frequency for Physical Facilities
    Observation: Observed that the floors in the walk-in cooler (chicken) is in need of cleaning.
    Correction: Clean the physical facilities at a frequency necessary to ensure the protection and safe preparation of food.

This visit was made to conduct a routine inspection.
Good hand washing procedures were observed.
Note: Check the food display unit temperatures and control volume of food placed on display unit to make sure food temperatures maintained at 41F or below.

  • Ambient Air or Water Temp Meas Dev or PSI Gauge in Good Repair & Accurate
    Observation: The thermometer on the prepackaged meat display unit is not in good repair and/ or not accurate in the range of use.
    Correction: Ambient air temperature devices shall be maintained in good repair and be accurate within the intended range of use.

This visit was made to conduct a change of ownership inspection.
3-compartment sink across cookline was removed to meet the requirement recovery rate of the new hot water heater.
Specifications for new hot water heater: State Industries (CSB12036SFEX 100) Input 45 KW
The following item shall be corrected within 30 days:
1. Dirty dish drainboard shall be resurfaced to provide a smooth and easily cleanable surface, along with adequate space to store dirty dishes.
*Approved for change of ownership, recommend issuance of Alexandria Health Department permit.
Note: Thank you for all the hard work all the departments made to make this transition a smooth process in regards to Alexandria Health Department requirements.

No violation noted during this evaluation.
12/31/2014Pre-Opening
This visit was made to conduct a change of ownership inspection. Prior to merge (re-opening), the following items require correction:
1. T-grid shelving rusted and shall be replaced.
2. Ceiling tiles in the dry storage room are no longer easily cleanable and shall be replaced.
3. The prep refrigerator at deli line is no longer working and shall be removed and replaced.
4. The 2-door undercounter refrigerator is no longer working and shall be removed.
5. Walk-in freezer floor tiles at juncture/walk-through are damaged and shall be replaced/repaired.
6. Shelving throughout department are no longer smooth and easily cleanable (rusted) and shall be replaced.
7. Burnt out light fixtures shall be replaced to provided sufficient lighting and all light fixtures shall be properly protected with covers or shields with end caps.
8. Flooring is in need of deep cleaning.
9. Coving at soda fountain machine is peeling from wall and shall be repaired/replaced.
10. Floor faucet is leaking water and shall be repaired. If faucet is no longer in use, cap to prevent long term maintenance.
11. Storage room with personal belongings shall be repaired/painted (chipped walls).
12. Hood no longer used shall be removed and the walls and ceilings shall be constructed of materials which are smooth, durable and easily cleanable.
13. Floor sink for 3-compartment sink is slow to drain and shall be maintained.
14. Clean floor in soda fountain cabinet.
Note: Hot water heater is not sufficient in size and shall be replaced.
