    Observation: The facility is not compliant with the employee health requirements because: employees didn't know th symptoms to report or where to find the symptoms.
    Correction: Train employees on employee health reporting requirements (symptoms and illnesses). Use poster provided today.

  • Certified Food Manager: Certificate Process
    Observation: The Person in Charge (PIC) has a valid certificate of successful completion of an accredited Certified Food Manager (CFM) exam, but does not possess the Northern Virginia CFM card.
    Correction: Obtain a Northern Virginia CFM card from ORS Interactive, Inc. within 10 business days. A copy of the Northern Virginia CFM card can be faxed to the Environmental Health Division at 703.746.4919. Failure to provide a copy of the photo identification card may result in further enforcement action.
  • Mops in Air-dry Position (corrected on site)
    Observation: Mops are not hung up to air dry.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.

This visit was made to conduct a routine food safety evaluation.
A food safety information pack binder was given and discussed.
A food protection manager must be present on site during all hour of operation. Repeat violations incur civil penalties starting at $100.00.

This visit is to inspect the new storage shed installed behind the building. The dry storage add on is for disposable cups, napkins, and utensils. The unit has its own flooring and shielded lights. It sits on gravel but, above the ground.

The manager stated that a dry storage for paper goods and disposable containers will be installed at the back of the building. Submit a plan review to our office before installing the unit.
*Breakfast is now being offered and storage space is not enough. The back of the kitchen is cramp.Provide 36 inches spaces in front of each units.
*Send the menu for breakfast.

    Observation: The handwashing station at the front station is being used as a dump station.

1). One door of the unit is blocked by floor mop sink.
2). The other unit is wedged on the corner and can't open the door.

This visit was made to conduct a routine inspection. Please note the following items:
1) Remind employees that if they have drinks in the back they must have lids and straws and be stored in approved locations.
2) Do not stack containers/utensils until they are completely dry (no dry nesting).
3) Good hand washing observed by staff.
4) Good hot and cold holding temperatures observed.

  • Eating, Drinking, or Tobacco Use / Proper Food Employee Drinking Containers (corrected on site)
    Observation: Open drinking containers stored in a manner that may contaminate food, food contact surfaces or utensils. (Employee drink located on prep sink counter without a lid).
    Correction: Food employees may have beverages in the kitchen areas as long as they are covered and consumed through a straw and stored in a manner that will prevent contamination to food, equipment, utensils, linens, and single service items.
  • Equipment & Utensils / Air-Drying or Adequate Draining Required (corrected on site)
    Observation: Metal containers were found stacked while wet after cleaning and chemical sanitization.
    Correction: After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining before contact with food.

This visit was made to conduct a pre-opening inspection. The following items shall be corrected within 10 days:
1. Seal all counter mounted equipment to counter surrounding it.
2. Prep unit not cooling properly. Do not use until unit is operating at 41F or less.
3. 2 door cooler not operating properly. Do not use until unit is operating properly (41F or less).
4. Clean all equipment, floors, etc. before using.
5. Provide copy of agreement w/Wendy's for the shared use of dumpsters.
Approved to oerate. OK to issue C/O/
Recommend issuance of Health Dept. permit.

05/23/2013Pre-Opening
This visit was made to conduct a pre-opening inspection. Hot water heater sizing will be recalculated-different sinks a pre-rinse sprayers installed. Some equipment will need to be removed to maintain 3 foot clearance. The facility still needs to complete several items (power company did not come when they were supposed to). I will notify contractor about possible hot water issue. Tentative inspection for Friday, May 17th.
