Overall, substantial compliance with the Virginia Food Regulations as observed on this date. Active managerial control observed regarding food temperatures, cooling temperatures, hand washing and clean/sanitizing of food contact surfaces. Discussed employee health with the person in charge.
  • Backflow Prevention Device, Design Standard (corrected on site)
    Observation: The mop sink was observed with a Y spilter with two valves past the bell breaker. Keeping the bell break under constant pressure may lead to a malfuntion and can potentially let contaminated water cross into portable water.The backflow or backsiphonage prevention device installed on the mop sink is not identified as meeting standards set by the American Society of Sanitary Engineering.
    Correction: Keep the pressure guage turned off and post a sign letting employees know.Provide the approved backflow or backsiphonage device for the specific application and type of device to prevent contamination of the drinking water system.
  • Handwashing - Using a Handwashing Lavatory (corrected on site)
    Observation: Observed the central hand sink blocked by a mobile cart. The handwashing facility located at the central kitchen area was blocked, preventing access by employees for easy handwashing.
    Correction: Access to the handwashing facility identified above is to be available during all hours of operation. Remove the mobile cart preventing its use.

Discussed employee health policy, handwashing and glove use, process of making fresh squeezed lemonade, and bare hand contact with ready to eat foods. During this inspection the facility was well above average in cleanliness, organization and employee knowledge of the Virginia Food Code.

    Observation: Observed pumpkins with visible soil on the stored overtop of covered ready to eat foods.
    Correction: Protect food from miscellaneous sources of contamination. Pumpkis should be relocated.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Observed accumulations of encrusted grease deposits or other soil on the following food contact surfaces: Some refrigeration unit door gaskets noted in need of cleaning.
    Correction: Clean and sanitize these surfaces for food contact.
  • Handwashing - Using a Handwashing Lavatory - No Other Purpose
    Observation: Observed back area (staff lockers/storage area) used for prepring raw chicken has no handsink. This area was not approved as a food preparation area on facility plan review.
    Correction: A handwashing sink shall be maintained so that it is accessible at all times for employee use.
  • Floors, Walls, and Ceilings - Cleanability
    Observation: Observed wall and mopsink junctures in need of sealing to render more cleanable.
    Correction: Seal wall / mopsink junctures to allow for easy cleanability.

    Correction: Discontinue storage of clean equipment and utensils in a location subject to contamination. Manager corrected.
