Follow-up
Observed no sanitizer in the facility or test strips. Leaving employee health information for the operator. A follow up inspection will be conducted on 10-20-15.
Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) Observation: Commercial yogurt cold holding at improper temperatures int eh residentail style refrigerator located on the back wall.
Correction: Had the operator relocate the yogurt in cream cheese to a unit that was operating at 41 or less. The units temperatur was turned dorn during the inspection. Operator to monitor and not use until it is capable of operating at 41 or less.
Temperature Measuring Devices (corrected on site) Observation: There was no temperature measuring device located in the any of the refrigerators..
Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature. Had the operator take the thermometers form the freezers to the refrigerators.
Temperature - Food Temperature Measuring Devices - Provided Observation: The person in charge could not provide a food temperature measuring device.
Correction: Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment. A food thermometer is to be in place to measure fodd temperatures with a range 0-220 F
Sanitizing Solutions, Testing Devices Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain a test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site) Observation: The food-contact surfaces of the following equipment were not observed sanitized:utensils. No sanitizer observed in the facility.
Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. Mangaer agreed to obtain sanitizer and ensure staff are wash, rinsing and saintizing all food contact surfaces.
Kitchenware and Tableware (corrected on site) Observation: Single-service or single-use article intended for food- or lip- contact not furnished in original wrapper intact or from and approved dispenser. Eating end of utensils stored and dispensed with the lip contact surface stored up.
Correction: Dispense single-service and single-use articles intended for food- or lip-contact in orginal intact wrapper or from an approved dispenser

Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) Observation: Residential refrigerator is not maintaining temp. All TCS food identifed are temping at 41f and were moved to a working refrigerator.
Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
