    Observation: Rice stored on a 5 gallon pail labeled ice melter.
    Correction: Do not store food in containers previously used to store toxic materials.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Heavy dust on refrigeration coils of 3-door upright display cooler.
    Correction: Clean refrigeration coils more frequently.
  • Linens - Storage of Soiled Linens
    Observation: Soiled aprons stored on shelves with food items.
    Correction: Store soiled aprons in containers / bags to prevent the contamination of food items or clean food equipment.
  • Kitchenware and Tableware
    Observation: Disposable cup dispensers overfilled.
    Correction: Do not overfill disposable cup dispensers. Store cups so lip-contact surfaces are protected from possible contamination.
  • Handwashing - Using a Handwashing Lavatory
    Observation: The handwashing sink by the 3-vat sink was blocked, preventing access by employees for easy handwashing.
    Correction: Provide access to the handwashing sink during all hours of operation. Remove the equipment preventing its use.

    Correction: Install rain gutters open at each end on walls below PVC drain lines to prevent possible dripping on food items and clean equipment.

    Observation: No soap dispenser at handsink by mop sink.
    Correction: Provide a soap dispenser at the handsink by the mop sink.

Purpose of site visit: Evaluate facility for food service permit.
Correct the following items:
1) Install a soap dispenser at the handsink by the mop sink.
2) Install towel dispenser at the handsink by the mop sink.
3) Clean refrigeration coils on coolers and freezers (dust).
4) Install glass globe charcoal oven exhaust hood light fixture.
5) Install a 100 watt frosted bulb or fluorescent lamp equivalent in the exhaust hood light over the charcoal oven.
6) Install a light cover / panel on the ceiling light fixture by the mop sink.
7) Install a back-flow prevention device on the mop sink water line to the chemical mixer.
8) Install thermometers in 3-door upright display cooler and ice cream freezer.
9) Label bulk food container for sugar and other foods not easily recognized.
10) Remove aluminum foil liners from table shelves. Recommend tray or sheet pans as needed.
Recommend a wall shelf on the mop sink / handsink wall.
Recommend a cart or dunnage rack for charcoal bag storage.
