The purpose of today's visit was to conduct a risk factor inspection. The following suggestions have been made as a means to incorporate Active Managerial Control: 1. Please have multiple Certified Food Managers (CFMs) available during a shift in the event that one needs to leave the establishment during hours of food handling. Suggestions made to make copies of CFM cards to keep on file in-house for quick reference. 2. Please train ALL employees on HACCP plan for Reduced Oxygen Packaging (ROP) prior to assigning them to vacuum seal products. Review HACCP regularly and reference it during ROP procedures.

Suggestions made to place grilled chicken sandwiches in walk-in freezer, rather than 1 door cooler at prep line, immediately after preparing to ensure items are cooled to 70F or below in 2 hours AND 41F or below within the next 4 hours.
