The purpose of today's visit was to conduct a routine assessment. The following suggestions have been made as a means to incorporate Active Managerial Control (AMC):
1. Create designated area for employees to store beverages to discourage them from storing drinks in hand sinks
2. Review proper hand washing and glove use. Provide training at next monthly meeting
3. Review inspection report with all employees during next upcoming staff meeting in order to improve safe food handling techniques and to promote public health

  • Critical: Handwashing / When to wash hands (corrected on site)
    Observation: A food employee failed to wash his or her hands before engaging in food preparation, after touching bare human body parts, after coughing, sneezing, eating, after handling soiled utensils, or after engaging in any activity that could contaminate the hands. OBSERVED EMPLOYEE DON GLOVES WITHOUT WASHING HANDS PRIOR.
    Correction: ALL food employees shall wash their hands OFTEN especially after handling trash, using the restroom, handling raw meats, handling soiled equipment and utensils, BEFORE putting on clean gloves, etc. Proper handwashing frequencies will aid in the reduction of foodborne illness. EMPLOYEE REMOVED GLOVES AND WASHED HANDS PROPERLY FOR ~15 SECONDS.
  • Wiping Cloths/Use Limitation/Wet Towel Storage (corrected on site)
    Observation: Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter. OBSERVED WET WIPING CLOTHS BEING STORED ON PREP COUNTER AT FRONT SERVICE LINE.
    Correction: Wet wiping cloths are to be used for wiping counters and other equipment surfaces and are to be held in a chemical sanitizer solution at the appropriate concentration between uses. WET WIPING CLOTHS PLACED IN SANITIZING SOLUTION.
  • Handwashing Sink / Used for Hand Wash Only (corrected on site)
    Observation: Observed the handsink at the FRONT SERVICE AREA, NEAR 3-VAT SINK being used TO STORE COFFEE CUPS.
    Correction: Handsinks are to be used only for washing hands to encourage proper hand washing and to prevent contamination of cleaned hands. COFFEE CUPS DISCARDED.
  • Handwashing Sink / Used for Hand Wash Only (corrected on site)
    Observation: Observed the handsink at the FRONT SERVICE AREA, NEAR 3-VAT SINK being used TO STORE CUPS OF COFFEE.
    Correction: Handsinks are to be used only for washing hands to encourage proper hand washing and to prevent contamination of cleaned hands. CUPS OF COFFEE WERE REMOVED FROM HAND SINK AND DISCARDED.
  • Critical: Common Name on Working Containers of Toxics (Cleaners, Sanitizers) (corrected on site)
    Observation: Working containers of poisonous and toxic materials are not properly labeled with a common name. OBSERVED SQUEEZE BOTTLE OF SANITIZER SOLUTION BEING STORED AT FRONT SERVICE AREA WITHOUT A LABEL.
    Correction: Label all working containers of poisonous and toxic materials, including cleaners and sanitizers, with a common name to prevent the dangerous misuse of these materials. BOTTLE OF SANITIZER SOLUTION LABLED.

**Approval is hereby granted for the issuance of a Health Department Permit. This inspection report shall serve as your permit until the official permit is received. There were no out of compliance items noted at the time of this inspection. There will be a first routine inspection in approximately 30 days. Equipment additions/replacement/changes are not allowed without Health Department approval.**
Note the following recommendations:
It is recommended that more than one person on staff be a Certified Food Manager. A Certified Food Manager must be on the premises during ALL food preparation and service.
There is a Type II hood only above a convection oven. Clean hood as remmended by manufacturer.
It is recommended that a monthly pest control program be implemented. Maintain records of pest control treatments for Health Department review.
