Monitor food temperatures this afternoon at the prep cooler. Have the cooler serviced if unable to maintain foods at the proper temperature.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) (repeated violation)
    Observation: Food items in the prep cooler (tomatoes, guac, mango salsa) cold holding at improper temperatures. Lid was open and unit is near the grill and hot holding equipment.
    Correction: Refrigerator was adjusted from 38 to 33 setting (therm inside read 47). Foods must be maintained at 41 degrees or below. Monitor temperature this afternoon to ensure temperatures improve.
  • Personal Care Items - Storage (corrected on site)
    Observation: Observed antiseptic solution, lotion, and soap stored near utensils and equipment. Container of cleaner was stored on utensils.
    Correction: Items were removed and stored away from food and utensils.

Prep refrigerator thermostat was adjusted. Check frig food temperatures later today to verify that refrigerator temp has come down. Manager expressed interest in setting up a training session for employees. Permit issued.

    Observation: Ice cream scoop found stored in the ice cream with handle in contact with the food.
    Correction: Ice cream was discarded. Make sure handles are up out of the food.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Tomatoes, salsa, cucumbers cold holding at improper temperatures.
    Correction: Prep refrigerator thermostat was adjusted. Monitor temperature to ensure unit can maintain foods at 41 degrees or below.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no test kit for the quat sanitizer at the 3-compartment sink.
    Correction: Obtain a quat test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
