NOTE: Good job storing wipe rags in sanitizing solution. Good job labeling spray bottles holding chemicals & storing away from food, food preparation, & clean dishes. Observation: Pizza toppings in the top part of the prep cooler were out of temperature. Deli ham was stacked/filled too high in pan & found to be 47-48 degrees F. & sausage was 45 degrees F.
Correction: Cold holding is 41 degrees F. Do not overfill pans & keep lid closed as much as possible since large pizza oven, directly across from prep cooler, puts off a lot of heat.
- Equipment - Good Repair and Proper Adjustment
Observation: The pizza prep cooler lid is not in good repair as the lid does not cover or fit the unit properly. With the large pizza oven directly across from this cooler, putting of a lot of heat, this is especially problematic.
Correction: Repair/Replace pizza prep cooler cover to ensure all foods such as pepperoni, cheese, sausage, diced tomatoes, etc. are kept 41 degrees F. or below.
