Good job with employee beverages having both a lid and a straw. Left January 2016 ServSafe Foodhandler handout. Discussed ensuring the same utensil or flipper used on raw or not fully cooked meats is not also used to remove ready-to-eat meats from the grill. Have a separate utensil or flipper for ready-to-eat meats to prevent cross-contamination.
Critical: Toxics - Conditions of Use* (corrected on site) Observation: Pesticides were found on shelving near the office. Again discussed the use of pesticides and that they may ONLY be used in a food establishment by a certified pesticide applicator as when used improperly the chemical could get into food or dishware used for food.
Correction: Restricted used pesticides are to be applied by an applicator certified as defined in 7 USC 136(e) Certified Applicator, of the Federal Insecticide, Rodenticide Act, or a person under the direct supervision of a certified applicator. These chemicals will be removed from the premises by the owner/management today!

* All foods MUST be prepared in restaurant or come from approved, inspected source * NOTE: Discussed importance of washing hands between/before putting on gloves. Great job date marking, Good job with employee beverages having lid & straw. Discussed need to clean dust/webbing on wire shelving near microwave & where soups are hot held. Left handouts on CDC risk factors for foodborne illness, poster on manual dishwashing, & 2015 ServSafe training schedule.
Critical: Hands - When to Wash* (corrected on site) Observation: Employee observed not washing hands before putting on gloves.
Correction: After using the restroom, after working with raw meats, before putting on gloves, etc. always wash hands for at least 15 seconds at hand sink.
Gloves - Use Limitation (corrected on site) Observation: An employee was observed touching raw beef & then a ready-to-eat sub roll. Then employee touched raw chicken and multiple utensils contaminating them & was stopped by inspector before getting ready-to-eat sub roll.
Correction: Ready-to-eat sub rolls should not be touched with same gloved hand used to touch raw meat or contaminated surface as this can cause foodborne illness. Wash hands before putting on new gloves when switching between raw & ready-to-eat foods.
Critical: Sanitizer - Criteria/Chemicals for food contact* (corrected on site) Observation: Chlorine sanitizer in wipe rag bucket was found to be greater than 200 ppm & this is used to clean the prep board's food contact surface.
Correction: Use chlorine sanitizer test strips to make sure concentration is between 50-100 ppm. * Remade to 100 ppm during inspection*

No violations observed during today's (10/20) inspection. NOTE: God job with employee drinks with lid & straw. great job date marking in coolers. Observed cooling in small batches & covered to prevent contamination - Good job! Discussed proper pesticide use. No violation noted during this evaluation.
