Ceiling tiles need to replaced, the store is planning to replace the entire ceiling. The dish machine, several walls and the floors around equipment in also need of cleaning.

    Observation: Observed date mark residue on dishes and the shelves were soiled at the wing street station (where the mixing bowls sit).
    Correction: Clean the surface of equipment at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications.

    Correction: Clean metal racks thoroughly and routinely.

    Observation: Metal pans that are clean have food debris and label residue still on them.
    Correction: Clean metal pans and bowls to remove the residue and food debris. Then allow them to properly air dry before stacking them.

    Correction: Make sure dishes are allowed to air dry completely before stacking them.

    Correction: Maintenance has been notified of the 3 compartment sink. Place a work order to have the mop sink repaired as well.

    Observation: Ceiling tiles are stained, there is a build up of dust around the air vents
    Correction: Clean ceiling tiles to remove stains and build up of dust. Replace ceiling tiles where necessary.
