    Observation: Observed rice at 45-47°F from the previous day in the refrigerator. The pan was full and the lid was put on it will it was cooling on the counter before putting in the refrigerator.
    Correction: Product was discarded as well as the mash potatoes that were on top on the container of rice. Large quantities should be broken down and/or iced for quicker cooling. Cooling temperatures are: 135-70 within 2 hours and 70-41 in an additional 4 hours.
