Follow-up inspection conducted to check on facility and equipment cleanliness. PIC states that a cleaning schedule has been made but nothing has been cleaned yet. Will return next week.
  • Non-Food Contact Surfaces (repeated violation)
    Observation: Observed accumulations of grime and debris on the following surfaces- vents above fryer, wall behind 3-compartment sink, sides of dish machine, shelving in kitchen and walk-in refrigerator, air vents in ceiling, floor by fryer, shelving at pizza station, walls and floor around oven. Toilet in bathroom needs to be cleaned.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Plumbing System Maintained in Good Repair (repeated violation)
    Observation: Spray hose at 3-compartment sink is leaking.
    Correction: Repair and maintain all plumbing components and fixtures.

    Observation: Floors and walls in the kitchen are dirty.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Received letter from Area General Manager stating that floor replacement/repair is scheduled to be completed by the end of November 2013. This must include replacing the coving where floor is repaired and in the back prep area. Annual Permit issued. Observed very good handwash practices today.

As stated in the previous inspection, the permit to operate this food establishment expires on 10/31/2013 and will not be reissued until corrections are completed. Also, before new equipment for deep frying raw chicken wings is installed you must submit plans (section 3600 of VA Food Regs). Call me at 501-4152 for more information or if you have questions.

    Observation: Observed grease and/or dirt/dust build-up on non-food contact surfaces: wire shelves (proofer, box prep, sauce dispenser), between retarder 1 and prep tables, and exterior surfaces of pans.
    Correction: Clean non-food contact sufaces
    Follow-up on 10/29/2013 - Wire shelves have been cleaned EXCEPT the shelves in the proofer. Still need to clean shelves in proofer and area between retarder 1 and prep tables and pizza pans.

    Observation: Floor tiles missing/damaged and not cleanable around grease interceptor.Coving pulled away from wall by back prep table (residue build-up between coving and wall needs to be removed/cleaned).

    Follow-up on 10/29/2013 - Floor is cleaner than at last inspection but still not clean under equipment (prep table, prep refrigerator, soda refrigerator), next to oven, under dishmachine. Wall had been cleaned at back prep area but still has a greasy residue on it. Correct by cleaning facility.

Some improvement in sanitation since routine inspection. Still need to clean wire shelves and finish cleaning floors and walls. Floor is in poor condition and needs repair/replacement. Coving needs to be replaced if it no longer can be attached to the wall. Observed new equipment being delivered for deep frying raw chicken wings. The current permit to operate this food establishment expires 10-31-2013. A new permit will not be issued until plans are submitted and approved for the installation of this new equipment.and the facility is clean and in good repair.
