Observed a greasy floor in the dish washing area. Plumber arrived during the inspection to look at the grease trap. Part of the grease trap had not been cleaned during routine cleaning, causing the contents to leak out of the side. Observed pickled garlic & vegetables on shelves and in reach-in refrigerator. PIC states that these are not served to the public- they are for decoration/personal use. Hot water heater is leaking. According to the PIC, the hot water heater will be replaced, the floor tiles will be pulled up and replaced, and plumbing will be repaired the first week of April. Reach-in refrigerator by the door appears to be running high. Food inside observed at 48-51 degrees. Recommend discarding food or transferring to another refrigerator if it was made this afternoon and can meet cooling requirements. PIC states food will be discarded. PIC states that they no longer wish to serve as a commissary for other food service businesses. EHS will follow up regarding repairs in a couple of weeks.

Correction: Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands (2) The container and (3) Exposed food clean equipment, utensils, and linens and unwrapped single-service and single-use articles.

Observation: Several foods in the reach-in refrigerator are cold holding at improper temperatures.
Correction: Recommend discarding foods. Ensure foods are maintained at 41 degrees or below.

Observation: No quat test kit in facility.
Correction: Obtain a quat test kit.
- Equipment - Cutting Surfaces (repeated violation)
Observation: The cutting board at the prep refrigerator is heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
Correction: PIC plans to have the cutting board resurfaced within the next week or so.

Observation: Observed food residue on the slicer after it had been wiped down with sanitizer. Can opener blade was also soiled with food residue.
Correction: Clean. Slicer should be taken apart when cleaned.

Correction: Repair.

Observation: Floor under 3-compartment sink in poor repair. Tiles are peeling off.
Correction: Floor is scheduled to be replaced.
