Food temperatures in the walk-in refrigerator are much better. There is now a multi-quat sanitizer at the 3-compartment sink. Sanitizer concentration is very high, >500 ppm. A company should be coming to service it soon. Do not use sanitizer at 3-compartment sink until is has been recalibrated. New permit issued for the owner change.

Observation: Chlorine sanitizer in wiping cloth bucket was >200ppm, at three part sink it bleached out the test strip.
Correction: The dispensing unit at the three part sink is for QUAT sanitizer and is not calibrated to correctly dispense chlorine. Replace chlorine with QUAT sanitizer or have chemical company re-calibrate dispensing unit for chlorine.

Note: A data logger was left in the walk in cooler to record temperatures to see if the unit is losing temperature over night. It will be picked up on Monday. Permit issued.

Observation: Observed food in the walk in cooler at elevated temperatures: veg stock 47, chicken soup 47, chick peas 45, red beans 45, braised beef 51, ham 50.
Correction: Food was discarded. TCS foods moved from the unit. Data logger placed in unit to monitor temperatures. Repair unit to maintain food at <41F at all times.

Observation: Severely dented cans found on can rack.
Correction: Separate severely dented cans for return to vendor.
