The one drawer unit with pasta on the grill line appears to be struggling to maintain temperature for all products stored within. Repair or adjust the unit so that it operates correctly.
  • Non-Food Contact Surfaces (corrected on site)
    Observation: The nonfood contact surface of the bar glass chiller was observed with broken glass debris in the bottom.
    Correction: Remove all glassware, rewash all glassware, and thoroughly clean the chiller when glass is broken, then return it to service.
  • Physical Facilities in Good Repair
    Observation: The floor in the keg walk-in is not maintained in good repair
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Lemons used in plating will be relocated to a different area to prevent any possible cross contamination.
Replace the internal thermometer in the one bar cooler.

    Observation: The flow pressure gauge on the dish machine did not appear to be operating correctly.
    Correction: Determine if the gauge is in need of repair or should be replaced or the hot water pressure increased. The hot water should run between 15-25 psi per the data plate on the side of the dish machine during the final rinse cycle.

    Observation: Back door threshold is not maintained in good repair
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
