Routine
Critical: Cooling* Observation: Sausage noted not being adequately cooled to prevent the growth of harmful bacteria.
Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.
Critical: Food - Potentially Hazardous Food - Cold Holding* Observation: Sausage, yogurt, cheese cold holding at improper temperatures
Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
Physical Facilities in Good Repair Observation: Paint on kitchen wall above the 3 basin sink is not maintained in good repair
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Routine
-Recommended lessening the product in the refrigerator and freezer for better air flow for the units to operate correctly. Research butter spreads to see if all need to be refrigerated or could be moved to dry stock. Recommended the possibility of adding a small wire shelving unit or other solutions of organization for drying dishes (instead of using the top of the chest freezer), for getting product and produce in boxes off the floor, and for extra dry storage if some food items can be removed from the refrigerator. - Demonstrated calibrating thermometers and how to set-up the 3 vat if the dish machine does not work.
Equipment - Good Repair and Proper Adjustment Observation: Observed the refrigerator stocked in a way that prevented all food product from maintaining proper cold hold temperature of 41 or less.
Correction: Some food with-in the refrigerator in certain areas appears to be not receiving proper air flow to maintain temperature. Adjust stock in the refrigerator and then observe the food with the thin probe thermometer to ensure all food is 41 degrees or less with-in the unit.
