Sanitizing Solutions, Testing Devices Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
Equipment - Good Repair and Proper Adjustment Observation: Cres Cor hot holding cabinet was observed in a state of disrepair and damaged. (Not maintaining food at 135 degrees or higher)
Correction: Repair the hot holding cabinet to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the hot holding cabinet, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Critical: Food - Potentially Hazardous Food - Cold Holding* Observation: Bologna cold holding at improper temperatures
Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
Equipment and Utensils - Durability Observation: The food containers being re-used for other food product are not designed and constructed to be durable.
Correction: Remove this item from the facility and replace with an approved unit as needed. Equipment and utensils must be capable of maintaining their original characteristics in order to be easily cleaned and to prevent contamination of food.
Physical Facilities in Good Repair Observation: Insulation on the condensation line in the walk-in freezer is not maintained in good repair
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Routine
- Remove cardboard from under legs of shelving units - Exchange ammonia test strips for the chlorine test needed for the 3 basin sink. Notes: Grease trap was just serviced. The ice machine was cleaned and sanitized before returning it to service. The dish machine operated correctly at the time of inspection (156 degrees-wash, 182 degrees-rinse/sanitize) All pots, pans, utensils cleaned and sanitized. Final deck clean scheduled for today. All equipment has been gone over and is working properly. No violation noted during this evaluation.
