Train staff to remove soiled cutting boards after use to dish wash area to be washed, rinsed and sanitized. Suggest having tongs stored by taco chips for staff use.

    Observation: A food employee at dish machine failed to wash his hands after handling soiled dishes and before removing clean dishes form machine.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
    Observation: Chlorine sanitizing solution used was not at an acceptable concentration.
    Correction: Adjust the chlorine sanitizing solution to a level of at least 50 parts per million when the pH is at 8 or less and the water temperature is 75°F.

New floor tiles in kitchen and dish room area. Repairs made in walk in including new flooring. Ceilings repaired, new paint through out, new decor. All equipment service and cleaned. Eco Lab Pest Control.
Still need chlorine test strips, hand wash sign at kitchen hand sink, No Smoking Signs, mop/broom hangers. Do final cleaning and sanitizing of all food contact surfaces before any food preparation.
