    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. Do not send the whole container of Horizon milk to the classroom for each meal. Send a small portion using time as a public health control. For large container of whole milk, implement the time as a public health control method.

    Observation: According to the ""consume by"" date on the commercially processed ready-to-eat (RTE) cole slaw in the refrigerator, the food should have been discarded 3 days ago.
    Correction: Discard the food at this time and ensure all commercially processed RTE food is served, sold or discarded by the ""consume by"" date after opening. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

    Observation: Food containers for cooling food are arranged so as not allow for maximum heat transfer.
    Correction: Arrange the food containers in the refrigeration equipment to provide maximum heat transfer through the container walls. Loosely cover or uncover the food if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. Use wider pans as opposed to tall & large containers as to allow for more surface area so the heat can escape.

    Observation: The ready-to-eat (RTE) commercially processed tuna, applesauce and beans in the refrigeration unit was not properly dated for disposition after opening.
    Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

    Observation: The door of the automatic warewashing machine was observed in a state of disrepair.
    Correction: Repair the door to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the door, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Warewashing Equipment, Determining Chemical Sanitizer Concentration (repeated violation)
    Observation: A sanitizer test kit is not being used to ensure the chemical sanitizing solution(s) are at the proper concentration.
    Correction: Use a QUATERNARY AMMONIA chemical test kit to ensure the sanitizing solution is maintained at the proper solution.
