The above observations and the following were discussed with the person in charge:
-Provide new test strips for monitoring the concentration of the quaternary ammonium sanitizer. The test strips provided have gotten wet and are no longer accurate.
-No food prep was observed during this inspection.

  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: The ceiling vents throughout the facility are noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

The above observations and the following were discussed with the person in charge:
-Please provide a copy of the invoice from the repair company for the dishmachine to the health department once repaired.
-Facility is no longer serving lunch. Breakfast is still being served and children bring their lunches. No food prep observed during this inspection.

  • Food Storage Containers - Identified with Common Name of Food (corrected on site)
    Observation: Unlabeled food containers. Observed bulk container of sugar stored without being labeled.
    Correction: Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.
  • Critical: Food - Pasteurized Foods - Prohibited Reservice and Prohibited Food* (corrected on site)
    Observation: Raw shell eggs used in the preparation of ready-to-eat foods without subsequent cooking in facilities serving highly susceptible populations. The facility is using non-pasturized shell eggs to make a large batch of scrambled eggs for children. Advised the PIC to discontinue using the shell eggs for service to the children in the daycare except when baking.
    Correction: Substitute raw shell eggs with pasteurized shell eggs or pasteurized liquid, frozen, or dry eggs or egg products in the preparation of RTE foods. Special food safety precautions must be taken in facilities that serve highly susceptible populations. It is necessary to protect those who are particularly vulnerable to foodborne illness and for whom the implications of such an illness can be dire.
  • Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site)
    Observation: The food-contact surfaces of equipment were not observed sanitized. The high temperature sanitizer in the dishmachine measured between 172'F and 178'F. The thermolabel tape measuring the temperature of the water did not change indicating the surface temperature did not reach a minimum of 160'F. The PIC contacted the repair company during the inspection and stated they will manually sanitize all dishes until the dishmachine can be repaired.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.

-Employee health policy, handout provided.
-Information provided on Certified Food Managers Course.
-No food prep observed during this inspection.
Facility observed to be very clean and well maintained, great job!

The above observations and the following were discussed with the person in charge:
-Employee health policy discussed. Handout provided.
-Please provide a barrier in the reach in cooler for the foods used for the church and the foods used for the daycare. The existing cooler can be divided in half with one side labeled for church use only and the other side labeled for daycare use only. If not enough room is provided, please provide an additional cooler for use by either the church or the daycare only.
The person in charge is doing an excellent job with keeping the kitchen and equipment very clean, great job!

  • Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation* (corrected on site)
    Observation: Raw food of animal origin holding in a manner that may cause cross contamination of to ready-to-eat food (RTE). Observed raw turkey burger stored over lettuce and raw shell eggs stored over yogurt in the reach in cooler. PIC stated these foods belong to the church and not to the daycare. Advised the PIC that the foods for the daycare need to be kept separated from the foods used for the church members. Foods were moved in the cooler during the inspection.
    Correction: Separate raw foods during storage, preparation, holding, and display from raw RTE food including other raw food such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
  • Temperature - Food Temperature Measuring Devices - Provided
    Observation: The person in charge could not provide a food temperature measuring device. The thermometer provided was a meat thermometer. This thermometer cannot take temperatures of cold foods. Handout provided showing the type of thermometer that is required.
    Correction: Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.
