    Observation: Chlorine sanitizer in the three compartment sink measured at 0 ppm. PIC refreshed the sanitizing solution, it was measure at 100 ppm.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.

05/27/2014Follow-up
The above observations and the following were discussed with the person in charge:
-Ensure the reach in cooler is holding foods at 41'F and below. The cooler was set on the coldest setting during the inspection but the PIC stated that the door had been opened to clean a spill. Monitor the temperature of this cooler and repair or replace as needed. A follow up inspection will be conducted within 10 days to ensure this cooler is working properly.

  • Critical: Food - Potentially Hazardous Food - Cold Holding*
    Observation: Milk was observed to be cold holding at improper temperatures. The milk in the refrigerator in the kitchen was measured at 45'F. This milk was unopened and had not been out for breakfast. The refrigerator was measured at 50'F. Cooler was turned down on the lowest setting during the inspection. If cooler cannot maintain a temperature below 40'F and keep foods at 41'F then it will need to be serviced or replaced.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: The can opener blade was observed to be dull. Observed metal shavings along the sides of the can opener blade indicating the blade has become dull.
    Correction: Disassemble the can opener, clean and sanitize the assembly, remove and replace the blade. Can opener blades must be kept sharp to prevent creation of metal fragments that can contaminate food in the can when opened.
  • Non-Food Contact Surfaces (repeated violation)
    Observation: The nonfood contact surface of the shelf used to transport foods to the rooms and the holder for the can opener have accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: The floors throughout the kitchen noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

-Ensure deli meats are dated when opened.
-Recommend filling in the holes in the wall next to the paper towel dispenser in the restroom.
-Employee health policy observed.
