(b) Arranging each type of food in equipment so that cross contamination of one type with another is prevented. (c) Preparing each type of food at different times or in separate areas.

    Observation: Curry sauces were noted not being adequately cooled to prevent the growth of harmful bacteria.
    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.

ALL CRITICAL VIOLATIONS and RISK FACTOR VIOLATIONS CORRECTED DURING THE INSPECTION. Data logger used to show staff proper cooling procedures and to verify cooling process. Product cooled from 133 deg. F to 66 deg. F in 43 minutes.
  • Critical: Employee Health* (corrected on site)
    Observation: Employees or applicants are not aware of the reporting procedures concerning information about their health as they relate to the symptoms caused by illness, infection, or other source that is associated with an acute gastrointestinal illness or a lesion.
    Correction: Have the license holder require employees or applicants report to the person in charge if they are experiencing the following symptoms or conditions: (1) diarrhea, fever, vomiting, jaundice, or sore throat with fever. (2) A lesion containing pus such as a boil or infected wound that is open or draining and is on the hands or wrists, unless an impermeable cover such as a finger cot or stall protects the lesion and a single-use glove is worn over by an impermeable cover or on other parts of the body, unless the lesions covered by a dry durable, tight-fitting bandage.

    Observation: Observed raw shell eggs not stored in refrigeration equipment that maintains ambient air temperature of 45°F or less (stored at room temperature on cook line)
    Correction: Store raw shell eggs in refrigerated equipment capable of maintaining ambient air temperatures of 45°F or less. Use time as a public health control for eggs.

    Observation: The prepared ready-to-eat (RTE) curry sauce, peanut sauce, cooked chicken in the refrigeration unit is not properly dated for disposition.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

    - covers/guards over 2 fans inside the Continental reach-in refrigerator
    - shelves inside the reach-in freezer

    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Equipment, Utensils, Linens, and Single-Service and Single-Use Articles (corrected on site)
    Observation: Cleaned metal bowls observed stored on a shelf beside 2 dirty rodent snap traps.
    Correction: Remove rodent snap traps from storage shelving and clean shelf. Store cleaned metal bowls in a clean, dry location where not exposed to splash, dust or other contamination at least 6 inches above the floor.
  • Plumbing System Maintained in Good Repair
    Observation: Plumbing connections under the employee handsink in food prep. area observed leaking.
    Correction: Repair leaking handsink. Plumbing systems and components shall be maintained in good repair.
  • Physical Facilities in Good Repair
    Observation: Vinyl floor tiles observed deteriorated in the following areas:
    - beneath the deep fat fryer
    - beneath the stove
    - beneath the wok burners
    Flooring in above-cited areas in unlevel and holds grease and gray water

    Correction: Repair/replace flooring. Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Heavy grease accumulation observed on floor beneath the deep fat fryer.Dust/grease accumulation observed on the exterior of the exhaust ventilation hood and on 2 lights under the hood.
    Correction: Clean floor, exhaust hood and hood lights. All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
  • Mops - Drying Mops
    Observation: Mop observed not hung up to air dry.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
  • Premises - Maintaining Premises - Unnecessary Items and Litter
    Observation: Facility is storing unnecessary items to the operation or maintenance of the establishment. Numerous empty plastic vinegar jugs were observed piled in corner of kitchen beside the mop sink. Also there was clutter on the floor of the interior storage room.
    Correction: Remove all unnecessary items from the facility. The presence of unnecessary articles, including equipment which is no longer used, makes regular and effective cleaning more difficult and less likely. It can also provide harborage for insects and rodents.
