LEX# 1328095 A complaint was received that stated that the owner of this facility was preparing soup and pastry at her home and selling it at the restaurant. EHS spoke with complainant and he indicated that he was previously preparing food for this facility. EHS made a site visit and found the owner (PIC) to be present. She indicated that she is currently involved in a business dispute with persons who were prospective business partners. She indicated that the soup that was in stock was prepared by this person and that she did not obtain any documentation from this person as is custom for this facility due to the fact that the soup preparer represented themself as a credible professional. Additionally when EHS arrived PIC was baking frozen pastry in an convection oven on site. PIC has agreed to pull this food. She had been reminded to verify source in writing every time.

Correct the above within one day. Observed a food service worker rinsing wares after removing them from the sanitizer - please re-train staff not to rinse items after sanitizing. Wash -> rinse -> sanitize -> air dry.

Add home standard cooler/freezer in new basement storage area - paper stored under sump pump line - cover the line and if items are on shelves, store 6 or more inches above the floor. Menu: bagels are displayed and sliced by the staff -> customers apply toppings at toasting station. Facility has inspection reports/permits on file for local food vendors. Reviewed employee health policy, risk based inspection format and Health Department expectations with new owners and GM.
