A complaint was received that stated the complainant was served food that contained a rock and frozen sushi. The PIC was not aware of the complaint. During the inspection EHS observed fish for sushi thawing under refrigeration. Rice is purchased and received in bulk containers. EHS did not observe any food handling practices that would introduce nonfood objects into the food. EHS advised PIC to review the need to observe dry foods and make sure they do not contain and rocks or other nonfoods.
Reminder - foods may be thawed 1. under refrigeration 2. while completely submerged under running water or 3. as part of the cooking process (refer to 12 VAC 5-421-790 for details).
