Knowledgeable staff and person in charge. Pro-active in addressing and making lasting fixes. Excellent cooking and cold holding temperature on all the other units. Monitor the booster heater fuse. Food Storage - Clean and Dry Location Observation: Observed thawing fish on the bottom shelf in the walk-in uncovered.
Correction: Store food where it is not exposed to splash or install an approved durable, and cleanable barrier between the splash source and the food to prevent contamination.
Critical: Food - Potentially Hazardous Food - Cold Holding* Observation: Observed many of the cold foods throughout the kitchen that were cold-holding at improper temperature. Maintain ambient air temperatures of 37 degrees F ensuring that food temperatures are held at 41 degrees F or below.
Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
Non-Food Contact Surfaces Observation: Observed significant dust build-up (approx. 1/4 to 1/2 inch of dust) on the air intake filter located above the slicer. This dust may fall into food that is being preped on food prep. table.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Critical: Hands - Preventing Contamination from Hands* Observation: Observed kitchen staff cutting lettuce with bare-hand contact. Lettuce is (RTE) food that will not recieve heat treatment and use of gloves should be implemented.
Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
Critical: Food - Potentially Hazardous Food - Cold Holding* (repeated violation) Observation: Observed foods on the sandwich prep. unit and at the salad bar cold-holding @ improper temperatures. Operator discarded all the PHFoods at the time of evaluation.
Correction: Have these units serviced and re-calibrated to hold ambient temperatures of 36 to 38 degrees F ensuring food temperatures of 41 or below.
