OBSERVED THE FOLLOWING:
* GOOD JOB ON PROPERLY THAWING RAW MEATS ON THE BOTTOM SHELF BELOW AND AWAY FROM OTHER FOODS.
* GOOD JOB ON KEEPING H.A.C.C.P. BASED FOOD TEMPERATURE LOGS- NICE WORK BY ENTIRE STAFF!
* STAFF HAD CLEAN APRONS/UNIFORMS AND HAD HAIR RESTRAINED.
* HAND-SINKS FULLY STOCKED WITH SOAP/ PAPER TOWELS AND SIGNAGE.
* MECHANICAL DISH-MACHINE WAS SANITIZING @ 180 DEGREES F IN THE FINAL RINSE.
  • Critical: Food - Potentially Hazardous Food - Cold Holding*
    Observation: Observed the cold foods holding at improper temperature in the walk-in refrigerator.
    Correction: Operatror relocated some of the food that was in the thawing process and discarded other food items. Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.

    Observation: The "quat" sanitizer solution concentration measures in excess of 400 ppm.
    Correction: Mix "quat" sanitizer solution to a concentration of 200 ppm. The employee in the dish room diluted the solutions to 200 ppm.

* ADJUST THE AMBIENT AIR TEMPERATURE IN THE DELFIELD UNITS TO ENSURE FOOD TEMPERATURES OF 41 DEGREES F OR BELOW.
* INSTALL A DUAL ATMOSPHERIC VACUUM BREAKER ON THE PRESSURE WASH HOSE.
* PUT THE MOP-HANGER IN PLACE.
NOTE: IT IS RECOMMENDED TO SWITCH OUT THE FAUCET FIXTURE ON THE KITCHEN HAND-SINKS- THE EXISTING ONE IS NOT EXTREMELY USER FRIENDLY.
