Cloths - Wiping Cloths - Use Limitation Observation: Observed wiping cloths placed on countertops and not kept in sanitizing solution.
Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* Observation: The ready-to-eat (RTE) commercially processed @FOOD@ in the refrigeration unit was not properly dated for disposition after opening.
Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

OPERATOR STATED THAT HE WOULD BE TAKING CARE OF IT IMMEDIATELY.
Correction: Clean and sanitize these surfaces for food contact.

Critical: Equipment and Utensils - Before Use After Cleaning* Observation: The mechanical dishmachine was not sanitizing @ 50 ppm chlorine. OPERATOR CHANGED OUT THE CONTAINER OF SANITIZER WITH A NEW 5 GAL. BUCKET= 70 PPM CHLORINE OBSERVED= CORRECTED @ TIME OF EVALUATION.
Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.
Premises - Maintaining Premises - Unnecessary Items and Litter Observation: Observed accumulation of food debris and garbage on the ground on the dumpster pad outside. Instructed the operator to obtain insect/rodent proof garbage containers for storage of garbage outside and to clean/ bleach the dumpster pad.
Correction: Operator corrected at time of evaluation.
