All food temperatures taken were internal, except for milk (ambient air temperature taken of each unit).
Notes:
Frozen hamburger patties were placed in warmer. The cook said that they have them in the warmer in case they need them, if they don't need them they go back in the cooler. This is improper holding. Foods must be fully reheated before being hot held. If foods are to be placed in the warmer they should be hot holding at 135*F. Since the patties were still frozen and not in the temperature danger zone, a violation did not result. All employees are being made aware of this observation, so this does not happen in the future.
This inspection was a risk factor inspection that focused on the 5 risk factors for foodborne illness (food from unapproved sources, inadequate cooking temperatures, inadequate holding temperatures, improper employee health and hygiene, and cross contamination of food and equipment). Good retail practices (GRPS) observed were discussed with operator and/or staff at time of evaluation.

All food temperatures observed are internal.
Due to the age of the building, the facility does not comply with current code requirements. In the event of a change in operator or remodeling, the facility must be brought up to the current code requirements. This may include the addition of one or more handsinks, improved lighting, repair of structural deficiencies, and repair or replacement of damaged equipment, and proper installation of laundry facilities.
Storeroom floor has been tiled and floor-wall junctures have been sealed.
Service line 4 not currently used this school year.

  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Minimal build up inside the interior panel of the ice machine.
    Correction: Clean and sanitize.
  • Handwashing Lavatory, Water Temperature, and Flow (repeated violation)
    Observation: The handwashing sinks in the adult (women restrooms) equipped with separate cold and water faucets rather than a mixing valve or combination faucet.
    Correction: Remove and replace the separate cold and hot water and provide a mixing valve or combination faucet capable of providing an adequate flow of water at 100°F and above.
  • Plumbing System Maintained in Good Repair
    Observation: Waste drain line or drain line connection leaking at the left basin of the three-compartment sink.
    Correction: Repair so it no longer leaks.
  • Physical Facilities in Good Repair
    Observation: 1) Section of ceiling in adult women's restroom is damaged.
    2) Section of wall (paint) at three-compartment sink is worn.

    Correction: Repair.
  • Critical: Toxics - Storage of Toxic Containers*
    Observation: Several chemical spray bottles are improperly stored with food and food contact surfaces:
    1) all purpose cleaner on kitchen prep table shelves with food equipment, deli paper, gloves
    2) germicidal detergent a serving line 3 with bread, gloves, and deli paper

    Correction: Corrected. Store chemicals physically seperate from equipment, food, and food contact surfaces.
