We discussed cooling of chicken biscuits. PIC keeps a cooling log for ground beef. I encourage her to keep track of cooling all types of foods. Biscuits were found wrapped and placed into reach in refrigerator. Using the walk in freezer my decrease the time it takes to fully cool the chicken biscuits. PIC would like a training class for her workers at next inspection.

It is important that the side that children eat from are facing the spray nozzles within the dishmachine. Over the summer the following to be done: dust all pipes running along the ceiling, recover exposed insulation on pipe near spray hose in dishroom, some peeling ceiling paint along service line.
