We discussed cooling of chicken biscuits. PIC keeps a cooling log for ground beef. I encourage her to keep track of cooling all types of foods. Biscuits were found wrapped and placed into reach in refrigerator. Using the walk in freezer my decrease the time it takes to fully cool the chicken biscuits. PIC would like a training class for her workers at next inspection.
  • Physical Facilities in Good Repair
    Observation: Exposed insulation on pipe beside spray hose in dish room. A few holes in wall of dish room and rough paint.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. Wall to be smooth and cleanable.
  • Ventilation Systems - Cleaning Ventilation Systems - Nuisance and Discharge Prohibition
    Observation: Vent filters in the hood system and above dishmachine are not being maintained in a clean condition.
    Correction: Maintain hood system vent filters in a clean condition.
  • Premises - Maintaining Premises - Unnecessary Items and Litter
    Observation: Facility is storing unnecessary items to the operation or maintenance of the establishment. Floor mixer.
    Correction: Remove all unnecessary items from the facility. The presence of unnecessary articles, including equipment which is no longer used, makes regular and effective cleaning more difficult and less likely. It can also provide harborage for insects and rodents.

No critical violations. Lettuce and tomato cups were added to time control list. It was observed that the backside of trays are not fully sanitized with once through the dishmachine. It is important that the side that children eat from are facing the spray nozzles within the dishmachine. Over the summer the following to be done: dust all pipes running along the ceiling, recover exposed insulation on pipe near spray hose in dishroom, some peeling ceiling paint along service line.

    Observation: Employee washing dishes did not change gloves and wash hands after handling dirty wares before handling clean wares.
    Correction: Corrected by explaining requirement to employee who then removed gloves and washed hands. Recommend getting handwash sink in this area.

No risk factor violations observed today. Good cooling practices - soup, cooked chicken, tuna salad - be careful about stacking or locating food that is cooling too close together in 1 refrigerator. Recommend: refrigerator for salads/yogurts at service line. Handsink in dish room - employee must walk to other side of kitchen to wash hands after handling dirty dishes before handling clean dishes.
