- Hair Restraints - Effectiveness
Observation: Employees working behind the counter in the food area were not wearing the hair coverings that we require.
Correction: We require that all employees working in the food area wear a hat, a hair net, an open visor, a scarf, or some other type of hair covering that we have approved.
- Equipment and Utensils - Durability (corrected on site)
Observation: There were two pastry brushes with metal bands in the foodservice area.
Correction: We do not allow metal banded brushes in food establsihments. The area between the metal band, and the brush, is not cleanable at the bacterial level. Use a brush with a plastic band, or brush with no band.This violation was immediately corrected by the establishment management

Observation: The handle of one of the ice scoops, in the ice machine, was touching the ice.
Correction: We require that the handles of the ice scoops, be up,out of the ice, at all times. This violation was immediately corrected by the establishment management.
- Sanitizing Solutions, Testing Devices
Observation: A "quatenary ammonium" type of sanitizer is used, by this establishment, for the sanitizing step of manual wash, rinse, then sanitize, then air dry, dishwashing. And for storage of wet or damp wipecloths in the kitchen area. The test strips for monitoring "quaternary ammonium" type sanitizing solutions could not be located.
Correction: Available chlorine levels for the "quaternary ammonium" sanitizers, that this establishment uses, must always be 200 to 400 ppm, as measured by the correct test strips.We require that the correct test strips for monitoring "quaternary ammonium" type sanitizers be on hand at all times. And employees must know where the correct test strips are located. The test strips for "bleach type" sanitizers were in the kitchen area, but the 'bleach type" test strips will not work for "quaternary ammonium " type sanitizers. A package of "quaternary ammonium" type test strips needs to be present in the kitchen area.
- Handwashing Cleanser - Availability (repeated violation)
Observation: There was no handwashing soap at the "back" handwashing sink. (The " front" handwashing sink was stocked with handwashing soap.)
Correction: We require that there be handwashing soap at both handwashing sinks at all times. We need to do everything possible to encourage frequent, and whenever necessary, handwashing.
