- Jewelry - Prohibition
Observation: One of the cooks, preparing food, on the "cooks' line" had two rings, one with a stone on one of her fingers.
Correction: The only ring that may be worn on the fingers, when working with food, is one plain wedding band. This is true, even when disposable gloves are worn.
- Equipment - Good Repair and Proper Adjustment
Observation: There is a "leak" between the sprayer head assembly, and the hose to which the sprayer is attached, in front of the mechanical dishwasher. There are disposable plastic gloves tied around the hose, presumably as an attempt to partially stop the "leak.
Correction: The hose and/or sprayer head need to be repaired, or replaced, using durable, smooth, easily cleanable materials. The plastic gloves that are tied around the hose need to be removed. The plastic gloves introduce an unnecessary place where bacteria may hide, and may grow. The repair needs to be properly taken care of, as soon as possible.
- Handwashing - Using a Handwashing Lavatory - No Other Purpose (corrected on site)
Observation: There was a red bucket in the basin of the handwashing sink that is next to the mechanical dishwashing area.
Correction: Handwashing sinks may be used for nothing except handwashing. Nothing may be stored in the basin of a handwashing sink. This violation was immediately corrected by the establishment management.
- Physical Facilities in Good Repair
Observation: There are rough surfaces and exposed wood at the wall to wall interface, to the immediate right of the handwashing sink next to the mechanical dishwashing area.
Correction: We require that all walls in kitchen areas be maintained so that they are kept smooth, easily cleanable, and resistant to moisture at all times. This kitchen wall area needs to be repaired/refinished.

- Nonfood Contact Surfaces
Observation: There were three milk crates being used as a substitute for smooth, cleanable shelving, in the walk-in refrigerator.
Correction: We do not allow milk crates (or plastic soft drink bottle crates) to be used as a substitute for proper shelving, in refrigerators (or in freezers). Milk crates (and soft drink bottle crates) have rough surfaces and are not cleanable at the bacterial level. Replace using proper shelving, or smooth, easily cleanable materials.

Observation: There was one can of tomatoes, with a dent in the side seam, and one can of sweet relish, with a dent in the bottom seam, that were being stored among canned goods intended for service to customers.
Correction: Cans need to be inspected for dents in top, bottom, or side seams when deliveries arrive. Cans with dents in seams need to be separated from canned goods intended for service to customers. Cans with dents in seams need to be stored in an area specially designated for "damaged cans only," until they can be returned for reimbursement, or they may be discarded. This violation was immediately corrected by the establishment management.

Dishwashing facilities were being maintained properly. No food temperature problems were observed.
- Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
Observation: There was black mold visible, on a small cutting board on the "cooks' line," which had accumulated to the point where is could be visibly scaped off.
Correction: This cutting board needs to be scrubbed and washed, rinsed, and sanitized more carefully at the end of each day that it is used. If the black mold discoloration can not be completely removed, so that it is no longer visible, by this daily cleaning process, the cutting board needs to be discarded, and replaced with a new cutting board.
- Handwashing Signage/Handwashing Facilities
Observation: There was no sign in the ladies employee restroom saying something to the effect of "employees must wash hands.
Correction: We require that there be a sign in any restroom which employees may use which says something to the effect of employees must wash hands. The signage needs to be put back in place in this employees rest room.
