Handwashing facilities were being maintained properly. No food temperature problems were observed.
- Critical: Hands and Arms - Clean condition* (corrected on site)
Observation: The employee working at the mechanical dishwasher was observed handling "dirty dishes," on the "dirty dishes" side of the mechanical dishwasher, and then handling "clean" dishes, without first washing his hands.
Correction: The hands must be washed, at the nearby handwashing sink, after handling "dirty" dishes and before handling "clean dishes." The establishment management needs to keep a closer eye to see that this procedure is always followed.
- Critical: Package Integrity* (corrected on site)
Observation: There were two cans of vegetables with dents on the top seam, but were being stored among canned goods intended for service to customers.
Correction: Cans with dents in top, bottom, or side seams may not be used for service to customers. Cans with dents in top, bottom, or side seams need to be separated from canned goods intended for service to customers, as soon as deliveries arrive, and cases are unpacked. Cans with dents in seams must be stored in a special area, designated with a sign, which says "damaged cans only," until they can be discarded, or may be returned for reimbursement. This violation was immediately corrected by the establishment management.
- Critical: Backflow Prevention, Air Gap*
Observation: At the "rinse arm assembly," in front of the mechanical dishwasher, the "air gap" between the bottom of the sprayer head, and "outer rim" of the steel table, below, is less than 1 inch wide.
Correction: We require that the air gap be at least one inch wide, when the sprayer is hanging freely. This is a 'back-flow" prevention issue and is therefore considered a "critical issue." This problem needs to be corrected as soon as possible.

- Utensils - In-Use - Between-Use Storage
Observation: The handle of the ice scoop was touching the ice, in the ice bin in the bar area.
Correction: If the ice scoop is to be stored in the ice, the handle must always be up, out of the ice. This violation was immediately corrected by the establishment management.
- Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site)
Observation: One of the two choppers on the magnetic strip knife rack, in the back part of the main kitchen room, had visible vegetable debris on it.
Correction: Only clean knives may be placed on the knife rack. The two knives, and the knives rack itself, were immediately taken to the dirty side of the mechanical dishwasher to be scrubbed, and washed, rinsed, and sanitized, prior to further use. This corrected the violation.
- Handwashing Signage/Handwashing Facilities
Observation: Two kitchen handwashing sinks did not have signs in place saying "employees must wash hands.
Correction: We require that there be a sign posted at each handwashing sink saying something to the effect of "employees must wash hands." These signs need to be put in place at the two handwashing sinks which are missing the signs.
