Don't forget to date ham slices. Do not reuse Styrofoam containers. If you place cheese on counter for the day's special you cannot keep for another day. This is also for any sliced tomatoes that you have available for service kept on the counter.

    Correction: Corrected by putting on gloves.

There are still mouse droppings in storeroom along coving. Clean up droppings. Glue traps have been placed in storeroom. Burgers were hot holding at 138F. Qt-10 test strips are available. Permit issued. 1/14/14 Owner called to tell me that he had cleaned up the droppings in the storeroom.

    Correction: Clean. Defrost freezer.

    Observation: Mouse droppings found in storeroom.
    Correction: PIC stated two small mice were recently caught. Clean up droppings. Keep traps set.

It appears QT-10 test strips have been ruined. Replace. Permit expires 1/31/14. Pests to under control. Maintain proper food temperatures at all times. If you cook onions for lunch, write a policy that states you cook and discard for lunch only. Call for reinspection.

    Observation: Burgers found holding at 118 F.
    Correction: Maintain at 135 F or above. PIC turned steam table up. Burgers are prepared and held for lunchtime only.

    Correction: 1. Maintain at 135 degrees or above. Onions were reheated in a microwave and placed on steam table. 2. Keep unit on so food remains at 135 F or higher. Unit was turned back on.

    Correction: PIC relocated foods to bar refrigerator. Unit was turned to colder setting. Keep door closed, check air temperature later today. You may return food when it is 41 degrees or below.

    Correction: Clean.
