156 F Wash/175 F Rinse Dishmachine Remember to keep restroom door closed. Call for reinspection. Dishmachine and plumbing issues to be addressed for permit renewal Note to file: 2 new refrigerators installed. New floor has been installed.

    Observation: Seal on Hobart warmer does not close properly.
    Correction: Repair.
  • Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures (corrected on site)
    Observation: Final rinse temperature was 175 F, less than the required 180 F.
    Correction: Discontinue the use of the machine. Use the 3-c sink. PIC called service tech and stopped using machine.
  • Plumbing System Maintained in Good Repair
    Observation: Several plumbing issues present: leak under handsink by dishroom, dripping 3-c faucet, clogged handsink drain.
    Correction: Repair.
  • Ventilation Systems - Cleaning Ventilation Systems - Nuisance and Discharge Prohibition
    Observation: Hood filters above cookline are dusty.
    Correction: Clean.
  • Premises - Maintaining Premises - Unnecessary Items and Litter
    Observation: Old unused equipment present: hose/water line for a non-existent grinder, tilt skillet.
    Correction: Remove equipment.

Kitchen is going to be renovated this summer. New lights and light shields have been installed. Kitchen is much brighter. New cleanable ceiling tiles have been installed in storeroom. Some equipment has been removed (one mixer, stack oven, grinder). 156 degrees wash, 179 degrees rinse. Wiping cloths 200 ppm. 3 compartment at 200 ppm.
  • Critical: Food - Potentially Hazardous Food - Cold Holding*
    Observation: Tuna at 47 degrees. Unit is running high.
    Correction: Tuna was made today and will be discarded today. Manager to check unit on Monday prior to putting any PHF food inside. I highly recommend placing unit on your temperature log sheet as well as your milk boxes. Milk boxes had air temperatures of approximately 44 degrees. Active managerial control would be to monitor temperatures of these units as you do your walk-ins.

Visit to school cafeteria to inspect the cleaning of the ceiling. Dust has been removed from ceiling. Duct work and vents have been cleaned. Hood systems have been cleaned. Kitchen ceiling is not "smooth and easily cleanable" due to holes in surface. Surface dust has been removed. Ceiling panels are not absorbent. Ceiling in storeroom is also not smooth and cleanable. These panels are absorbent. Some panels have stains. Ceiling in kitchen looks dingy. Responsibility for future up keep on ceiling must be addressed.

Drain from walk-in box was replumbed. New diamond plated flooring was installed in walk-in. Note: no wiping cloth buckets were set up today but wet cloths were being used. Set up sanitizer buckets. Note: time control is being used in kitchen. Today pizza in warmer at 116 degrees, nuggets on line at 122 degrees. This is why it is important to have a time control policy. No critical violations. 160 degrees wash/182 degrees rinse.
