Kitchen is going to be renovated this summer. New lights and light shields have been installed. Kitchen is much brighter. New cleanable ceiling tiles have been installed in storeroom. Some equipment has been removed (one mixer, stack oven, grinder). 156 degrees wash, 179 degrees rinse. Wiping cloths 200 ppm. 3 compartment at 200 ppm.

Visit to school cafeteria to inspect the cleaning of the ceiling. Dust has been removed from ceiling. Duct work and vents have been cleaned. Hood systems have been cleaned. Kitchen ceiling is not "smooth and easily cleanable" due to holes in surface. Surface dust has been removed. Ceiling panels are not absorbent. Ceiling in storeroom is also not smooth and cleanable. These panels are absorbent. Some panels have stains. Ceiling in kitchen looks dingy. Responsibility for future up keep on ceiling must be addressed. Drain from walk-in box was replumbed. New diamond plated flooring was installed in walk-in. Note: no wiping cloth buckets were set up today but wet cloths were being used. Set up sanitizer buckets. Note: time control is being used in kitchen. Today pizza in warmer at 116 degrees, nuggets on line at 122 degrees. This is why it is important to have a time control policy.
