No critical violations. Found chicken breasts cut up and cooling in walk in at 57.7 F. These were found tightly covered. To cool quicker, place on sheet tray without covering and place in refrigerator. To correct the situation today, PIC placed on sheet tray and put inside walk in freezer. Note: Ventilation was poor today. Either there is a problem with the equipment or the oil being used is causing considerable greasy vapors in kitchen. Have service men check into equipment. Remember if open glasses/cups/bottles are being drunk from, hands must be washed prior to returning to kitchen. Permit issued.
