To cool quicker, place on sheet tray without covering and place in refrigerator. To correct the situation today, PIC placed on sheet tray and put inside walk in freezer. Note: Ventilation was poor today. Either there is a problem with the equipment or the oil being used is causing considerable greasy vapors in kitchen. Have service men check into equipment. Remember if open glasses/cups/bottles are being drunk from, hands must be washed prior to returning to kitchen. Permit issued.
