In addition to a routine inspection, training occurred for 16 students who accompanied me during the facility inspection. Note: Do not reuse food containers such as mozzarella plastic tubs. Permit issued.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Spatulas are in poor repair.
    Correction: Replace.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Fryer cabinets are dirty.
    Correction: Clean.
  • Lighting, Intensity
    Observation: One light in hood is burned out.
    Correction: Replace bulb.

No critical violations. I observed ground venison in freezer. Ensure it is from an approved source. Regular chef is on leave. A substitute is in charge. Students were not working in kitchen during my visit. Dishmachine has not been used for awhile

    Correction: Clean.

    Observation: Slicer is not clean.
    Correction: Clean and sanitize slicer before reuse. Disassemble and pay attention to hard to clean areas.
