    Observation: Bulletin board with staples on wall over prep sink and prep table.
    Correction: Protect food from miscellaneous sources of contamination.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Ham at deli service area at imprope cold holding temperatures
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Temperature Measuring Devices
    Observation: The thermometers for some of the small refrigeration units and display coolers were not properly located where they are easily readable.
    Correction: Relocate the temperature measuring devices so employees can easily monitor the refrigeration unit temperatures.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Torn cook's mitten.
    Correction: Remove mitten from service.

    Observation: Dead ceiling light in prep sink area by office.

1) Provide 50 foot-candles of light at prep sinks opposite floor mixer.
2) Install approved back-flow prevention device for mop sink water line to chemical mixer / dispenser.
3) Install thermometers in coolers & freezers.
4) Pay annual foodservice permit fee $40.
Approved for permit after items corrected.

Correct the following items:
1) Provide minimum of 50 foot-candles of light at prep line in front of exhaust hoods, at 2-door prep cooler, at single basin prep sinks. Also at serving line prep coolers.
2) Provide minimum 20 foot-candles at handsink by dishwasher, & at handsink by dry storage room door.
3) Provide minimum 10 foot-candles of light throughout the walk-in cooler & freezer.
4) Install 4" legs on Turbo-Chef counter-top oven.
5) Install thermometers in all coolers & freezers.
6) Install chemicals for dishwasher.
7) Install handwashing signage at handsinks.
8) Post "No Smoking" signage in service / dining areas.
Note: No water fixture at mop sink.
Note approved for foodservice permit.
