Observation: Fish patties at improper hot holding at improper temperature.
Correction: Maintain food at 135°F or above through the hot holding period.

Observation: Large cinderblock being used as a storage platform in the CO2 tank closet.
Correction: Remove cinderblock. Provide an approved dunnage rack or dolly in the closet for storage.

Observation: Small hot holding unit by fry at 128-142 degrees.
Correction: Adjust / repair hot holding unit to maintain food at 135 degrees or more.

Observation: Employee coat & personal items stored on Bag-N-Box rack.
Correction: Store employee clothing and personal items separate from food items and clean equipment. Recommend an addition coat rack on the wall between the beverage box rack and the 3-vat sink, and a storage bin on a bottom shelf or in a base cabinet / under a counter.
