    Observation: Employee was observed taking the thermometer from the sanitizer and then inserted the thermometer into a chicken patty for a temperature check.

    Observation: Chub meat, sliced meat, and cheese were cold holding at improper temperatures in the walk in cooler, in the kitchen area.
    Correction: Discard the food and ensure that potentially hazardous foods/time-temperature control for safety foods (phf/tcs) for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Cold hold potentially hazardous/time-temperature control for safety foods at or below 41*. Per manager, the unit was below 40 upon her arrival but since the unit has been constantly opened and closed the temperature of the unit and the food is not maintained at or below 41*. Manager did relocate phf/tcs foods not being prepared today into the produce walk-in in the storeroom. EHS to follow-up tomorrow.

Staff have been and out of unit throughout the morning which can affect temperature of food and ambient air. Additional refrigeration may be needed to prevent the increase in temperature from the doors constantly being opened and closed. Suggesting removing limited quantity from walk-in to eliminate the need to keeping going into the unit..
