All stands have been equipped with new stainless steel counters/cabinets on casters and along with new hot case equipment give the appearance of a clean look.
Stand 2 is not in use for foodservice--storing surplus non-food equipment.

    Correction: unless hot dogs have internal temperatures taken of the at the end of the event and are > 135 then they are to be discarded at the end of the event . During todays event One hot hold drawer the hot dgo was 139 and another stand the hot dog was 131 .
    Instructed CFM on requirement . He said they will not remove hot dogs and sausages from buns and return to refrigeration units any more

    >> handsinks are not well sealed with walls

    Correction: seal handsinks and counters in a smoothly seamed manner to walls

    Observation: >>laminate counters and wood cabinetry damaged multiple stands
    >>chemical storage prep table surface ( lower levels ) are corroded and pitted
    >> oven mitts torn stand 7

    Correction: >> restore counters and cabinetry in stands to smooth - durable - non absorbant and easily cleanable ]
    >> restore lower level prep tables to smooth - durable -non absorbant and easily cleanable

    Observation: pizza boxes stored incorrectly stand 1
    >> bar stir sticks not individually wrapped

    Correction: store with food contact side down
    >> bar stir sticks are to be handed out by employee or individually wrapped if customers get their own

    Observation: paper toweling out stand 3
    Correction: paper toweling to be present prior to next event

    Observation: ceiling air vent housing damaged stand 3
