Re-inspection. Owners stated that they pulled the unit out to inspect coils and found filthy. They cleaned it up. Temp at 35 F. The owners said they would still have it inspected by serviceman to make sure it is ok. Permit issued.

Do not reuse aluminum pans. Remember to date mark soft cheeses such as brie. The day you prepare or open a RTE food counts as day one. Summer sausage is made with a curing mix, beef and baked. Pickled onions and cucumbers are made in house. Do not reuse glass jars for storing. A seven day shelf life should be followed. Follow up needed to ensure refrigerator is holding foods at proper temp and to issue annual permit.

Caulk panel behind grease trap. Install coving along floor/bar junction. Install "Employee must wash hands" sign in both restrooms. Your refrigeration will limit you on what can be cooled. Owner intends to add more units in future. At this time soups to be cooked, cooled and reheated. Poaching raw chicken breasts and cooling. Cooking potatoes and cooling for salad. Plan Review Inspection Observations during an on-site visit. Seal gaps in all surface junctions--laminate and wall, and 3-c and wall. Clean up mop sink room. (One live American cockroach seen) Ceiling in kitchen, storeroom, dish area to be smooth and cleanable. Smooth faced vinyl is acceptable. No storage in back hallway with electrical panels. Clean floor drain found between rooms. Clean around grease trap. Bare wood to be sealed and coving around floor edge needed. Wall behind grease trap to be cleaned. Ice machine to be cleaned and sanitized--discard first 2 loads. Any holes seen must be sealed up. Seal bare wood in restroom cabinets. A covered trash can is required in ladies room. Ventilation required in men's room. Signage required at all handsinks (Employees must wash hands) Storeroom to have cleanable floors/walls/ceiling. Clean area behind hood system/cookline. Provide sanitizer, test kit, gloves, metal stemmed thermometer. For final inspection place a bottle of water in each refrigerator. Call for final.
