    Observation: Chlorine sanitizing solution used was not at an acceptable concentration.
    Correction: Machine was primed.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site)
    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: can opener blade.
    Correction: Clean and sanitize these surfaces for food contact.

    Observation: Observed a pan of raw meat over cartons of milk in walk-in refrigerator.
    Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from ready to eat foods.
  • Food Storage - Clean and Dry Location
    Observation: Observed food containers/boxes on the floor in the walk-in freezer.
    Correction: Elevate food storage onto approved shelving with minimum 6" legs or casters.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Turkey, ham, cut melon cold holding at improper temperatures (56, 54, 47). Food was stored in metal pans that were in another larger pan on top of ice.
    Correction: Food containers were placed directly on ice. Temperature came down significantly in about half an hour.

    Observation: Observed ice cream scoop without cap (at end of handle). Surface was rusty.
    Correction: Alter or replace this item to provide a surface that is free of unnecessary ledges, projections, and crevices.

    Observation: Observed cutting boards that are heavily scratched and scored. Several cutting boards had discoloration. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Cutting boards were discarded.

    Observation: Container of sanitizer at dish machine was empty.
    Correction: Sanitizer was replaced and machine primed. Test strip reads 100 ppm.

    Observation: Observed accumulations of dust, grease, and food residue on the following nonfood-food contact surfaces: sides of fryer, vents above grill/fryer.
    Correction: Maintain nonfood-contact surfaces of equipment clean.

    Observation: Soap was not provided at the hand washing lavatory in the Bistro kitchen.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.

    Observation: Dish machine and floors/walls in dish machine area noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

    Observation: Found ice cream containers in freezer had no lids for protection.
    Correction: All food is to be protected in cold storage on steel wire shelving. Please place lids on ice cream containers.

    Observation: Found damaged gaskets on double door reach-in unit on service line.
    Correction: All equipment to be maintained properly. Please repair gaskets.
  • Non-Food Contact Surfaces (corrected on site)
    Observation: Found food from rolls in warmer in bottom of unit.
    Correction: All nonfood surfaces to be clean. Please clean unit.
  • Plumbing System Maintained in Good Repair (corrected on site)
    Observation: Found hot water not on at handsink in men's restroom.
    Correction: All plumbing fixtures to operate normal. Please repair damaged gasket in the men's restroom. Maintenance working on it.

    Observation: Found hood lights burnt out.
    Correction: All lighting to be operational. Please replace burnt out bulbs.

    Observation: Observed employee cutting raw chicken on the table where the salad bar vegetable were stored.
    Correction: Chicken was immediately removed from the area and the area was sanitized. The vegetables were covered with plastic wrap which was changed.

    Observation: Observed cut fruit which included cut melons at 52°F in the 2 door refrigerator.
    Correction: Corrected by discarding the fruit. This was done by management.

    Observation: Observed mold on the soft drink nozzles.
    Correction: Corrected by removing nozzles from the machine and they were cleaned and sanitized.
