    Observation: Observed the food-contact surfaces of the equipment (sheet pans) in the 3 basin sink not sanitized. Observed the quaternary ammonium sanitizer concentration in the 3 basin sink < 150 ppm. Observed the sanitizer preset not properly working.
    Correction: Recommend after cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. Recommend manually adjusting the sanitizer concentration until the preset is adjusted to deliver the proper sanitizer concentration. PIC adjusted the sanitizer to 200 ppm.

Temperatures taken two times a day. Employee Health Notice and Form 1B observed. Recommend re signing annually. Reminder to wash hands and change gloves between each order. Items discussed for correction for routine inspection: Reconfigure front paper towel and soap holder so it is not over any food items so front handsink can be used
