We discussed the preparation of corn/black bean salad. I recommend prechilling cans of black beans and corn. Therefore it takes less time to cool the mixture. PIC to provide a written time control policy for foods that are either not under temp control or are difficult to remain at proper temps throughout the service period. All hands on deck performance observed. It appears workers know their duties well. Permit issued.
