All maintenance items from previous report have been corrected. No critical violations found today. Be sure ranch dressing is given a 7 day shelf life. The day you make it is considered day one. Do not use the date on the buttermilk. New line established for burritos and burrito bowls. Beef and chicken are precooked products that are heated and held hot for lunch service only. No leftovers are kept.

We discussed the preparation of corn/black bean salad. I recommend prechilling cans of black beans and corn. Therefore it takes less time to cool the mixture. PIC to provide a written time control policy for foods that are either not under temp control or are difficult to remain at proper temps throughout the service period. All hands on deck performance observed. It appears workers know their duties well. Permit issued.

    Observation: One milk display case found at 50 F
    Correction: To correct for today, do not keep milk that has been placed inside this unit for another day. Monitor temperature and do not put milk inside unless it can maintain 41 F or below. It appears that temp was around 42 F yesterday but a morning temp was not logged today.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Dunnage rack in storeroom is dirty in crevices. Can opener holder found dirty. Spray hose is soiled. Pipes under dishmachine are dirty.
    Correction: Clean.
  • Equipment, Utensils, Linens, and Single-Service and Single-Use Articles
    Observation: Clean dishes stored beside handsink subject to splash.
    Correction: Provide a guard to prevent splash.
  • Critical: Backflow Prevention Device, When Required* (corrected on site)
    Observation: Observed a hose attached to a faucet inside the can wash room without the proper backflow prevention device.
    Correction: Hose was disconnected. Install the proper device.
  • Handwashing - Using a Handwashing Lavatory - No Other Purpose (corrected on site)
    Observation: The handwash station at the cook station is being used for purposes other than washing hands. Ice scoop and tray found in handsink.
    Correction: The handwash facility identified above is to be used for washing hands only

    Observation: Dumpster or outside refuse container was open or uncovered.
    Correction: Cover all waste containers when not in continuous use.

    Observation: Observed dishmachine would not turn test tape to indicate sanitizing temperatures reached - wash temperature did not reach manufacturing minimum of 160 degrees.
    Correction: Emptied tank and refilled. Manager made tighter fitting on wash spray arm. Machine wash temperature exceeded 160 degrees - test tape turned.
